ramen is a japanese dish of noodles served in broth. there is a wide variety of ramen recipies, but all have two things in common - noodles and soup. the secret of a good ramen is the soup or broth in which the noodles and other ingredients are served. we take great care in the preparation of our ramen broth, which takes up to six hours to make.

| A Chinese green (yellow) tea of supreme quality from the province of Zheyiang. This tea resembling a silver monkey's paw in appearance, is produced in very limited quantities in the Song Yang region at the beginning of April each year, when the sky is "pure and clear". Under the Tang Dynasty (618 - 907) this tea was supplied as a mark of the highest honour to the Imperial Court. This is a very special tea produced by what is know as the "death by hot steam" method.
