In Japanese cuisine, sushi is made of seasoned rice with other ingredients, often seafood or vegetables, together with Nori seaweed. Some fillings used in sushi are uncooked, but mostly they contain cooked, blanched, smoked, pickled or marinated ingredients. Outside of Japan sushi is sometimes misunderstood to mean raw fish, but in Japan, sliced fish served raw is called sashimi and not sushi.

Our sashimi fish is premium quality, often caught in local waters the night before it is served.

Finger sushi started about 200 years ago as a street snack meant to be picked up and eaten with your fingers. You can use chopsticks to eat sushi, but fingers are still perfectly acceptable. But always use chopsticks, not fingers, when you eat sashimi.

Ever Shabu - Shabu-ed?
Well if you've never tried it, it's time you did!
We all know the Japanese are famous for their healthy food and Shabu-Shabu is both healthy and fun.
When you sit at the Shabu-Shabu table the first thing that arrives is a steaming pot of hot Miso broth, which is place onto a special hot-plate in the middle of the table. Then comes a plate of fabulous fresh raw vegetables, thinly sliced meat or seafood, a bowl of healthy noodles and some spicy dipping sauces. This is when the fun begins.
Shabu-Shabu is Japanese for "Swish-Swish", and that's just what you do. Pick up a piece of meat, seafood or vegetables with your chopsticks (you soon get the hang of it) and "Swish-Swish" it in the hot savoury broth. It takes just a few moments of "Swish-Swishing" to cook the thinly sliced food to perfection, then a quick dip into one of the spicy sauces and it's straight into the mouth. You can't get any fresher than that, straight from the pot and into your mouth.
Ah, but what about the noodles you ask? Well. Once you've eaten most of your meat or seafood, whatever vegetables you have left are put into the hot broth along with the noodles. Then it's every man and woman for themselves, as you and your fellow dinners spoon up the last of the broth with the vegetables and noodles.
It's great fun and a great way to eat one of the healthiest meals you'll ever come across. No cooking oils, no additives, no artificial flavours, just good, high-quality fresh ingredients cook by the best chef in the world - you!
